Im on a lettuce wrap kick. Last night decide to make the same thing/ similar recipe but with ground turkey this time. Not as great as the kangaroo ones, but still fucking delicious.
layed everything out so you can get an idea of what to add in. Make sure you drain the turkey after you cook it other wise i would imagine the wraps would come out rather messy, do this while you are cooking the veggies, add the turkey back in once the veegies are cooked.
very easy, cheap and healthy meal that tastes like it should be bad for you.

turkey


Seasoning for the turkey: ground pepper, diced onion, smoked paprika, and minced garlic, add turkey and mix it up.

Also here is some other notable shit that I have whipped up in the past few months. If you want recipes on any of it let me know.

Chicken spedini on a bed of sauteed red swiss chard and oven roasted parmesan eggplant


Blackend swordfish with broccoli an mushrooms with a chili-honey sauce on the side.



Oven poached salmon with sauteed green chard with crushed walnuts and blistered cherry tomatoes.




Oven broiled steelhead filet with sweet potatoes and garlic roasted brussel sprouts.


Basically what I eat everyday for breakfast.
eggs, avocado toast with P28 bread and a banana.

Decided to stay in last night due to the storms, so as usual I played wanna be chef.

Lamb chops with red wine pan sauce, drizzled with a rosemary balsamic reduction, sautéed red Swiss chard with onions and asparagus.


Marinade: lemon juice, olive oil, rosemary,thyme, garlic, pepper.




Searing on high heat while making the balsamic reduction.



After removing the chops I added more garlic and thyme to the pan, then deglazed the char from the pain using red wine to create a pan sauce. Which I then poured over the resting chops.

Decided to do swordfish again last night, but wanted to do something different than my regular pistachio crust, I was thinking about what kind of dry ingredients I have in the kitchen that might work well, i wanted something citrus-y, then in popped in my head
Earl Gray tea ! has some nice citrus flavor.


Decided I would do that and brighten it up even more with some lemon and lime zest with a bit of grated ginger.






Also made some mango salsa.


Made some brown rice, and sauteed up some bok choy and made a spicy sauce out of marmalade, white wine vinegar, lemon juice and chili peppers.




I have began to start lifting in the mornings before breakfast so I have been amping up the amount of protein.

This mornings breakfast was two fried eggs, a filet of salmon topped with leftover mango salsa and avocados. Don't mind my proud coffee cup.

Really? fun! I picked up a set of 4 of them while thrifting.

I love cooking with swordfish, great meaty texture and flavor unlike other light flakey fish, but try to limit it to only once or twice a month, out of all the fish out there it ranks #1 in mercury content.

Ahi+ scallops and greens

Ahi was previously frozen so I didn't cook it as rare as I would fresh. Scallops were divine, perfectly cooked, nice and tender.

I really just sort or wing it, I don't follow exact recipes or anything, most of it is a cumulative knowledge have acquired by watching cooking shows, reading food blogs etc etc. Sometimes though I'll just have random ideas, like the last meal I posted, it was first just going to be salmon, Brussels, sweet potatoes and asparagus. I forgot to use the turkey bacon with the sprouts so turkey bacon sushi came to mind, used Tom yum flavored seaweed strips for nori, matchstick carrots and zucchini with some brown rice I stole out of one of my prepped lunches.

I watch the hell outta some Good Eats. Alton is entertaining and educational even if you don't retain all of the culinary knowledge, you learn some history and science behind it all.

Salmon with sautéed broccoli, roasted pepper filled with squash soup I added a bit of kick chili powder, some ricotta and roasted carrots, then a "swoop" of leftover sweet chili mustard sauce I made earlier in the week and used on my ahi dish.
