The boysenberries taste like BOYSENBERRIES.

Over 18 months in the making, Lickable Wallpaper is a sour saison first aged in Chardonnay casks, then a foeder with Washington boysenberries. Look for this newest First Fridays Collection beer to start hitting shelves August 12.

Boulevard & Modern Times Collaborate On Restless Nights

From Boulevard:
A collaboration with Modern Times Beer + Coffee, this beguiling blend of fresh porter and barrel-aged porter was brewed with ten varieties of malted barley, wheat and oats. Following fermentation, this inky brew rested on bourbon barrel-aged coffee for two days, infusing trace notes of ripe fruit, citrus and rich vanilla. Look for it to hit shelves and tap handles in KC starting September 30, with other areas throughout our national distribution footprint to follow.
Modern Times is an intrepid cadre of brewers, coffee roasters and culinary wizards named after a beautifully crazy utopian community founded in 1850. Today, they are a brewery and tasting room in the Point Loma neighborhood of San Diego.
Ryan McNeive, lead brewer of Boulevard’s barrel-aging program, and Tessie Warnecke, Modern Times Coffee Buyer, answer a few questions about their latest collab.

HOW DID THIS COLLABORATION COME TOGETHER?

Ryan: As we get more into experimenting with artisanal coffee, cellar techniques and barrel-aging, it seemed like a natural fit for this project. We’ve always been fans of their beer, so we reached out and asked if they would ever be interested in collaborating. It came together pretty quickly after that.

CAN YOU EXPLAIN THE BARREL-AGING PROCESS?

Ryan: We wanted to make something complex in flavor that you would want to drink more than one of in a sitting. Most of our barrel-aged beers are 11-15% ABV, so I wanted to make something more drinkable that could still stand up to the barrel-aged flavors, even though “barrel-aged session beers” aren’t really a thing.
In this case, the base beer was 50% barrel-aged in my favorite distiller’s bourbon barrels for six months and then blended with 50% fresh beer. The recipe is a spinoff of a 14% ABV whiskey barrel-aged imperial porter that we are making for 2020 that includes a lot of our favorite malts, and even though we brought down the ABV, the final blend is still big enough to stand up to the coffee and barrel flavors. It’s a different porter than anything we’ve ever released in the past.

WHAT COFFEE BEANS WERE USED IN THIS BLEND? WHEN WERE THEY ADDED TO THE BEER?

Ryan: The coffee blend is 40% bourbon barrel-aged Colombia Silvia and 60% freshly roasted Colombia Heriberto coffee, which was added to the fresh beer, then blended with the BA beer. The process was pretty rad. We took about seven hours hanging and bagging the coffee before we pushed the beer on top to age for a couple of days on whole coffee beans.
Tessie: Both of these coffees I sourced from our connection, Accresco, in Salgar, Colombia. They are about 3 hours outside of Medellin. I got to visit these farms in February and see their operations, it was an incredible experience! They operate seven farms and one nursery, as well as their own wet mills. They partner with a dry mill in the town of Salgar, and have quality control pretty much through the entire supply chain. It is a family owned and operated business, I got to pick coffee alongside 3 different generations of the family.

HOW WOULD YOU DESCRIBE THE TASTE OF THIS BEER?

Ryan: This is one of the most complex beers we’ve ever made. Even without an extremely high ABV, there is a lot of body and malt flavors from the 10 malts used. Obviously the barrel-aged beer and barrel-aged coffee give off great whiskey aromatics and tannins that blend into a truly artisanal flavor.

WHAT WOULD YOU PAIR WITH THIS BEER?

Breakfast desserts or pastries, ice cream, and an early morning tailgate

Boulevard Plaid Habit Returns 11/4

From Boulevard:
Originally debuting in 2018, Plaid Habit was born a double-mashed imperial brown ale, matured for 18 months in freshly emptied 10-year Canadian rye whisky barrels. Featuring checkered notes of rich vanilla, charred oak, warming whisky and spicy rye, it was a huge hit, and since that initial release, we've received many questions regarding if and when we'll bring it back. So, to answer them all at once: yes, and now! (Well, starting in a week, anyway). Plaid Habit debuts starting in the Greater Kansas City Area on Monday, November 4th with other regions that typically see Smokestack Series Limited Release beers (Rye on Rye, Smooth Fuzz, Love Child series) to follow in the coming weeks. Look for Plaid Habit in four-packs of 12oz bottles and on draft. Please note that we do not have access to our distributors’ delivery schedules and will be unable to confirm when this beer is available near you.

First Fridays Collection: Your Popsicle Melted

Starting Monday, November 11th, we will release the final piece of our 2019 First Fridays Collection: Your Popsicle Melted. Pouring an alluring scarlet hue, this blend of sour golden ales and saisons was aged in French oak wine barrels and Sangiovese puncheons with our house lactobacillus and brettanomyces cultures before resting on 6,000 pounds of Michigan-grown Balaton cherries for four months in our original oak foeder.
Ryan McNeive, lead brewer of our barrel-aging program, tells us more about the long and complex barrel-aging process involved in making Your Popsicle Melted.

What’s the story behind this beer?

I’ve come across a few Balaton cherry beers in the past, and have always been interested in making one here at Boulevard. Side Project’s Balaton has always inspired me, along with Sun King and a few other breweries that have used this specific cherry. It makes a very interesting flavor when used at a higher ABV.

Tell us about the barrel-aging process. When were the cherries added?

We did a few brews over the course of 14 months, a Belgian Golden Strong in a foeder, and a couple of Saisons in red wine barrels. We blended up a ratio of what we really liked, and then added 6,000 pounds of cherries to that blend and placed it into our foeder.
We then did a super long maceration of the cherries. The whole fruit rested on the blended beer for 4 months. To put that into perspective, we usually do 2-3 months. That can be too long for a lot of fruits, but with cherries a long maceration seems to pick up more intense flavors and a bit more tannins, which creates a really unique beer.

Flavor Profile

Aroma – Tart cherries, lollipops, pie filling, brettanomyces
Malt – Pale malt, pilsner malt, wheat malt, unmalted
Hops – Aged saaz
Balance – Dry, slight puckering
Body – Light to medium

Characteristics

ABV – 7.4%
IBUs – 5
Color – 28
